SENZA, a new gastronomic proposal in the center of Seville

A gastronomic proposal based on Italian cuisine, with a rogue and daring approach, and an extensive cocktail menu in an attractive atmosphere with a striking design.

From the hand of the promoters of Burro Canaglia, SENZA opens.

The menu incorporates ingredients such as truffles, olive oil caviar, local artisan cheeses, marine plankton, or avant-garde elaborations, such as the use of dry ice, liquid nitrogen, smoked products….. They also have a Josper charcoal oven for their meats and fish. As star dishes, we highlight the steak tartar of Galician blonde cow with cipriani sauce, the carpaccio of acorn-fed Iberian pork with palo cortado marinade, the mushroom risotto and Iberian cheeks baked on embers or its lobster pizza. Also the raviolacci stuffed with asparagus tips and almonds with mandorle cream, Italian bacon and fresh foie gras, or the grilled wild red tuna sirloin on squid ink ajoblanco.

As for the distribution of the space, we can distinguish two distinct environments: on the one hand the bar area and high tables, with a more informal approach in which you can enjoy the menu, and on the other hand, the dining area, with space for 50 diners, and with a fresh and welcoming design, the decoration combines several styles, mainly industrial and colonial, and incorporating recovered elements typical of the Andalusian regional architecture.
