This new and very personal concept, which aims to turn everything upside down, is also a gastronomic challenge with a lot of sparkle that he faces after 30 years of experience.

Ajo de Sopas is a space where homage is paid to traditional cuisine, in substance but not in form, under the influences of his childhood and his homeland.

With two different menus, a more informal tapas menu and a more formal one based on dishes with top quality products treated with innovative techniques that seek the perfect balance between avant-garde and tradition. Local and seasonal raw materials that enrich each gastronomic creation of the chef from Palencia.
